Ingredients
Homemade turkey stock creates the best-tasting gravy, gather these ingredients.
- Turkey Bones - we use the turkey carcass, neck bones, and wing tips
- Carrots - peel and cut into 2-inch pieces
- Celery - cut into 2-inch pieces
- Onions - no need to peel the onions since they will be strained in the end
- Herbs - a mixture of rosemary, thyme, and sage
- Peppercorns
- Bay Leaves- use dried bay leaves
- Garlic - leave them whole

How to make turkey stock
You can make homemade turkey stock in the Instant Pot, Crockpot, Stove, or oven. I will show you how to make it in an Instant Pot below.
1. Roasting
Place turkey bones on a roasting pan and roast for 45 minutes at 425°F.
2. Prep
Place all ingredients inside of Instant Pot and cover with cold filtered water.
3. Pressure Cook
Set Instant Pot to high pressure and cook for 1 hour. Natural release for 30 minutes before removing the lid.
4. Strain
Pour bone broth through a fine mesh strainer into a large bowl. Transfer to large mason jars and cool to room temperature.
Substitutions for bone broth
- Bones - Turkey, chicken, beef, and veal bones make great-tasting stock. Purchase bones that are high in collagen like marrow and knuckle bones.
- Vegetables - Typically turkey stock is made with onions, carrots, and celery. I like to save my veggie scraps for stock.
- Aromatics + Seasonings - Bay leaves, parsley, rosemary, thyme, peppercorns, and garlic are all great options.
- Vinegar - You can add a tablespoon of apple cider vinegar to bring more nutrients out of the bones. This step is not necessary.

How to store turkey bone broth
There are many ways to store bone broth, pick the one that works for you!
- Mason Jar - This is the method I use since they are easy to thaw in the microwave. Make sure to use large-mouthed mason jars to prevent the glass from cracking.
- Silicone Ice Cube Trays - A great way to freeze turkey stock into smaller portions. I like to use the large cocktail ice cube trays for this.
- Plastic Containers
I recommend freezing leftover turkey stock so it doesn't go bad. If you were to refrigerate the shelf life is about 4-5 days.

Both are almost identical in the ingredients they use. The stock uses bones, and the broth uses meat. In return, you will find that stock is thicker and more gelatinous from the use of animal bones.
You can place the turkey carcass in a ziplock bag and freeze it for up to 6 months. When ready to make turkey stock, place the carcass in your Instant Pot or stock pot without defrosting.
Turkey bones only take 1 hour to pressure cook. Larger bones like beef or veal knuckles will take longer to cook. Overcooking your turkey stock will leave it tasting bitter and unpleasant.
Yes. A properly made stock should gel from the collagen in the bones. If your stock doesn't gel, it will still work. Maybe the bones your purchased didn't have enough collagen in them.

How To Make Turkey Bone Broth
Ingredients
- 1 Turkey carcass cut into pieces
- 1 onion halved
- 3 carrots roughly cut into large pieces
- 3 celery stalks roughly cut into large pieces
- 1 teaspoon black peppercorns

- 2 bay leaves

- 8 cups water
Instructions
