Step 1. Cut cabbage into wedges leaving the core intact to hold it together.
Step 2. Combine olive oil, garlic powder, paprika, salt, and pepper. Mix well.
Step 3. Coat cabbage wedges with the seasoning mixture on both sides.
Step 4. Preheat the air fryer to 400°F/204°C. Cook for 10-15 minutes, flipping wedges over at the halfway point.
Step 5. Combine Greek yogurt, lemon juice, olive oil, garlic, mustard, salt, and pepper to make the yogurt sauce.
