If you are looking for a new side dish that is impressive and easy to prepare, then you'll love this caramelized cabbage.

We are going to serve it with a creamy mustard and yogurt sauce that's packed with flavor. Making this underrated vegetable exciting and delicious!

Air fryer cabbage wedges are super simple to make and stunning once it's done. Caramelized and crispy on the outside, it melts in your mouth on the inside.

We cut the cabbage into wedges, but cabbage steaks are another popular way to prepare this recipe.

I love to serve Air Fryer Cabbage Wedges during the Fall and Winter months, but you can serve this healthy vegetable side year-round.

🔪 Step-By-Step Instructions

Follow along while I show you how to make this Air Fryer Cabbage in under 15 minutes.

Step 1. Cut cabbage into wedges leaving the core intact to hold it together.

Step 2. Combine olive oil, garlic powder, paprika, salt, and pepper. Mix well.

Step 3. Coat cabbage wedges with the seasoning mixture on both sides.

Step 4. Preheat the air fryer to 400°F/204°C. Cook for 10-15 minutes, flipping wedges over at the halfway point.

Step 5. Combine Greek yogurt, lemon juice, olive oil, garlic, mustard, salt, and pepper to make the yogurt sauce.

Step 6. When caramelized, remove the cabbage from the air fryer. Spoon a generous portion of the yogurt sauce on a plate, topped with cabbage wedge, and garnish with chili oil and fresh parsley.

👨🏻‍🍳 Chef Tips

  • Leave the core of the cabbage intact to hold the wedges together.
  • Cut smaller cabbage into four wedges, and larger cabbage into six wedges.
  • Coat cabbages with seasoning mixture in every nook and cranny.  This will help get those crispy edges.
  • Flip cabbage wedges at the halfway point so both sides are caramelized.
  • The sauce is very garlicky, so decrease the amount if you like a mild garlic flavor.
  • A touch of chili oil is nice to drizzle over top for color and heat.

Cut the cabbage right down the center, going through the core. Now, take each piece and cut it in half again going through the core. You'll have four wedges or a cabbage that is quartered.

  • 1 green cabbage medium size
  • 2 tablespoon Extra Virgin Olive Oil
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper

Yogurt Mustard Sauce

  • 1 cup Greek Yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon whole grain mustard
  • ½ lemon, juiced
  • 1 garlic clove, minced
  • ¼ teaspoon salt
  • ¼ teaspoon fresh cracked black pepper

Instructions
 

  • Cut Cabbage: Cut cabbage into wedges, leaving the core intact to hold it together.
  • Seasonings: Combine olive oil, garlic powder, paprika, salt, and pepper. Mix well.
  • Brush Cabbage: Coat cabbage wedges with the seasoning mixture on both sides.
  • Air Fry Cabbage: Preheat the air fryer to 400°F/204°C. Cook for 10-15 minutes, flipping wedges over at the halfway point.
  • Yogurt Sauce: To make the yogurt sauce, combine Greek yogurt, lemon juice, olive oil, garlic, mustard, salt, and pepper.
  • Serve: Spoon yogurt sauce on a plate, topped with a cabbage wedge, and garnish with chili oil and fresh parsley.

  • Cutting Cabbage: Cut the cabbage right down the center going through the core. Now take each piece and cut it in half again going through the core. You'll have four wedges or a cabbage that is quartered.
