This Horseradish Crusted Salmon Recipe will be your new favorite way to prepare heart-healthy fish. Fresh horseradish, panko breadcrumbs, and lemon create the most delicious crust on top of salmon.

Salmon

For this recipe, I recommend a Pacific, Steelhead, or King Salmon for their higher fat content and buttery flavor.

I like to portion my salmon fillets into 4-5-ounce portions and remove the skin.

Horseradish

I only recommend using fresh horseradish root, which you can find at most grocery stores.
Jarred horseradish will overpower the flavor of your salmon since it's packaged in vinegar.

Panko Breadcrumbs

A Japanese breadcrumb known for its light, crunchy texture that stays crisp, making it an ideal choice for this recipe.

Egg White

A whisked egg white is the binder or glue that holds the horseradish crust together.

Red Onion

Finely diced red onion gives a nice bite, color, and texture.

Lemon

Peeled, seeded, and diced lemon offers a zesty burst of flavor to the salmon. Nope, we don't use lemon zest or juice in this recipe. Trust the process!

How to Make Horseradish-Crusted Salmon

I've provided step-by-step photos below to make this recipe easy to follow at home. For the complete printable instructions and ingredient quantities, please scroll to the recipe card at the end of this post.

Toasting breadcrumbs in a large non-stick pan until golden brown.

Step 1: Toasting Breadcrumbs. In a pan, melt 1 tablespoon of butter and add panko breadcrumbs. Cook for 5-8 minutes, stirring occasionally, until golden brown. Remove from heat and set aside.

Whisking egg whites until frothy in a large glass bowl.

Step 2: Whisk 1 egg white in a large bowl until frothy. Cut the salmon into 4-5 ounce fillets and arrange them on a parchment-lined baking tray or in a casserole dish lightly brushed with olive oil. Brush the tops of the salmon with olive oil, then season with salt and pepper.

Step 3: Horseradish. Peel the horseradish root using a vegetable peeler, then grate it using a box grater or a microplane.

Step 4: Crust mixture. Add all the ingredients to the bowl with the egg whites and gently fold until well combined.

Step 5. Take the breadcrumb mixture and place it on top of each salmon filet and gently press down so the mixture sticks to the salmon.

Step 6. Bake the salmon in a 350°F oven for 15-20 minutes, or until it reaches an internal temperature of 145°F. For a golden brown crust, finish by broiling the salmon for 1 minute.

Chef Tips

  • Toasting Breadcrumbs. Transfer to a plate when golden brown so breadcrumbs don't burn.
  • Horseradish. Jarred horseradish will overpower the dish, so only use fresh horseradish.
  • Cooking Salmon. Cooking times may vary depending on the thickness of your salmon. Remove the salmon from the oven around 135 -140 degrees so it doesn't overcook.

Ingredients
  

  • 4 salmon fillets, center cut 5 ounces each
  • 1 egg white
  • 3 tablespoon horseradish finely grated
  • 2 tablespoon parsley chopped
  • ¼ cup red onion finely diced
  • ¾ cup bread crumbs toasted
  • 1 lemon peeled, seeded, and diced
  • 3 tablespoons unsalted butter melted
  • sea salt and pepper to taste
  • 2 tablespoons olive oil

Instructions
 

  • Preheat oven to 350°F/ 176°C. Toast bread crumbs in a pan with 1 tablespoon of melted butter, stirring occasionally, until they turn golden brown, about 4-5 minutes.
  • Mix egg white in a large mixing bowl to soft peaks. Fold in horseradish, parsley, red onions, bread crumbs, diced lemon, and melted butter.
  • Brush the baking dish and the salmon with the olive oil and season with salt and pepper. Top salmon with the horseradish mixture and transfer to the oven. Bake for 15 - 20 minutes or until the salmon reaches 145 °F/ 62°C.

    • Horseradish. Jarred horseradish will overpower the dish so only use fresh horseradish.

    This salmon recipe was a fantastic discovery! The inclusion of fresh horseradish caught my attention and made me a bit apprehensive—it seemed like it might be too strong. But it turned out to be perfectly balanced, and the flavor was exceptional. My whole family enjoyed it, and it's definitely earned a spot in our regular meal rotation. The only change I made was I cut the skin off each segment of lemon.
