Whole30 Sweet Potato Waffles (Breakfast Sandwich)

Whole30 Sweet Potato Waffles make the perfect vehicle for any sandwich. Smashed avocado, wilted spinach, crispy bacon, and a soft-cooked egg elevate this breakfast to a new level.

Ingredients

Waffle Batter

  • 1 medium-sized sweet potato grated
  • 1 egg
  • ½ teaspoon paleo powder

  • 1 cup spinach fresh
  • 2 slices bacon whole30 approved
  • 2 eggs
  • ½ avocado smashed

Instructions

  • Preheat oven to 350° F. Place bacon on a parchment-lined baking tray. Cook for 20-25 minutes or until bacon is crispy. Transfer bacon to a plate lined with a paper towel to absorb the grease.
  • Peel and grate sweet potato with a box grater. 
  • Place sweet potato, egg, and seasoning into a bowl and mix. 
  • Plugin your waffle iron and preheat. The device will take about 5 minutes to heat up and it will ding when it's reached temperature. 
  • Place sweet potato batter into a waffle iron making sure to spread the batter to the edges. 
  • Set to medium heat and cook for 5 minutes or until crispy.
  • In a small bowl smash avocado with a fork. Add a touch of salt to bring out more flavor. ¼ teaspoon should be the perfect amount.
  • In a medium-size saute pan wilt spinach in a small amount of olive oil.
  • Grab a non-stick pan and cook eggs over a low flame. Cook 2 minutes for side for over easy. 
  •  Time to assemble the breakfast sandwich. Cut the waffle into 4 quarters. Build the sandwich with smashed avocado, bacon, wilted spinach, and soft-cooked eggs. 

Notes

  • Cook bacon in the oven. Gone are the days of cooking bacon in a frying pan. Use an oven to get crispy, flat bacon.
  • Yams are the best.  What makes this recipe good is the sweet and salty flavors you get from the bacon and yams.
  • Squeeze the grated sweet potatoes. Vegetables contain a lot of water. Removing the liquid will give you a crispy waffle.
  • Preheat the waffle iron. You never want to cook a waffle on a lukewarm waffle iron. Wait until your device alerts you before the sweet potato waffle frenzy begins.
  • Cooking Spray. Most newer waffle irons are non-stick, but it's a good insurance policy to use a good quality cooking spray. I like this avocado spray from chosen foods.
  • Slow-cooked eggs. The trick to the perfect emoji eggs is using a non-stick pan on a super low flame.
