Air Fryer Parsnips

Air Fryer Parsnips make a tasty and delicious side dish. Crispy and caramelized parsnip fries are ready in under 12 minutes and are served with a tarragon aioli.

Equipment

Ingredients

  • 4 Parsnips
  • 1 tablespoon avocado oil
  • 1 tablespoon maple syrup optional
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

Tarragon Aioli

  • ½ cup mayo
  • 1 clove garlic minced
  • 1 teaspoon Dijon mustard
  • 2 teaspoons lemon juice
  • 1 tablepoon fresh tarragon chopped
  • salt and pepper too taste

Instructions

  • Preheat the air fryer to 400°F.
  • Peel parsnips and cut them into parsnip sticks or fries.
  • In a large bowl, toss parsnips, oil, maple syrup, salt, and pepper. Transfer into the air fryer basket. Cook for 12 minutes or until parsnips are cooked through
  • While the parsnips are cooking make the tarragon aioli. Mix together all ingredients and set aside.
  • Serve air fryer parsnips with a side of tarragon aioli.

Notes

  • Peel the skin of older parsnips to remove the bitter flavor.  Younger parsnips have smooth-thin skin that can be left on. 
  • The cooking time depends on the air fryer model and the thickness of your cuts.  We recommend roasting at 400°F/204°C for 10-12 minutes. 
  • If you don't like parsnips swap them out for carrots, turnips, celery root, or rutabega's.
