Ingredients

  • 4 cups turkey stock
  • ½ cup flour all-purpose
  • ½ cup butter
  • salt and pepper to taste
  • 1 tablespoon chopped fresh herbs sage, thyme, rosemary

Instructions

  • In a large saucepan, melt butter over low heat. Whisk in flour and cook over medium-low heat for 5 minutes to make a roux.
  • Pour turkey stock into roux and whisk vigorously to remove any lumps. Bring the gravy to a simmer and cook for 10 minutes over low heat.
  • Season with salt and pepper. Finish the gravy with fresh chopped herbs.

Notes

Making a roux: A roux is equal parts butter and flour. The trick to making a roux is cooking out the flour taste. Over medium-low heat, keep whisking the roux for 5 minutes until the roux gets a golden brown color.
Preventing Lumps: After the roux is made, you want to add the turkey stock in small amounts (1 cup at a time). After each addition, whisk quickly to remove any lumps. This will create a smooth gravy.
Make Ahead: If you want to make your gravy in advance, you can make it 2 days before Thanksgiving. Cool the turkey gravy down completely and place it in an airtight container. To reheat transfer to a small saucepan over low heat for 15 minutes.  You may need to add a touch of stock or water to reach the right consistency.
